Tomato Soup

They’re all sorts of different tomato soups out there,  but this is probably one of the simplest and tastiest, it’s best to use ripe tomatoes and served in a warm bowl or mug on the go

Tomato Soup (8)      Serves 4

• 750g tomatoes (ripe)
• 1 onion, (finely chopped)
• 1 clove of garlic (finely chopped
• Basil (stalks finely chopped)
• 4 cups vegetable stock
• Salt & pepper

  Put the garlic, onion and basil stalks into a pot with some olive oil. Cover the pan and simmer gently on a low heat for around 20 mins, stirring every now and then, in the meantime put the tomatoes into boiling water for 30 seconds, then remove the skin and roughly chop the tomatoes and add to the pot with the rest of the vegetables.

Pour in the stock and simmer for another 20 mins with the pot still covered.
Put the soup in a food processor (or hand-held immersion blender) and purée the soup, once that done return to the pot, bring back to a simmer and season with salt & pepper.

Pour into your mugs and enjoy with some fresh bread.
