Crostini (meaning "little toasts" in Italian) is an Italian appetizer consisting of small slices of grilled or toasted bread and toppings. The toppings may include a variety of different cheeses, meats, and vegetables, or may be presented more simply with a brush of olive oil and herbs or a sauce. Crostini is typically made using Italian baguettes
- mozzarella cheese
- fresh red chilli
- olive oil
- half a garlic
- fresh basil
Preheat the oven and diagonally slice your baguette into thick slices, put into the oven until slightly golden.
Rub each side with garlic, tear the buffalo mozzarella, and top each of your hot crostini with the mozzarella. Deseed and finely chop a fresh red chilli and sprinkle this over the mozzarella, put it back in the oven just so the cheese melts. Add a little seasoning and finish with a drizzle of good quality extra virgin olive oil.
Lovely with a little fresh basil torn over, you can even add a little lemon zest to balance the flavours. Quick and simple to make and your friends will love it.
