Chicken Breast Baked in Foil with Mushrooms & Thyme

This is a great dish that takes no time at all. Seriously it takes 5 minutes to prepare & then you just pop it into the oven to cook for less than 30 minutes. You can serve it with roasted potatoes or just plain rice.

Chicken Breast Baked in a Bag with Mushrooms, Butter and Thyme (666)

  • 2 skinless chicken breasts
  • 255g mixed mushrooms, torn up
  • 1 handful of dried mushroom (or any type you can get your hands on)
  • 3 large pats of butter
  • 1 handful of fresh thyme
  • 2 cloves of garlic, peeled and sliced
  • olive oil

Make a large envelope with the foil to cook everything in. Using the aluminium foil, make your bag by placing 2 large pieces on top of each other folding 3 sides in and leaving 1 side open. Make sure that all of the ingredients fit nicely.

Preheat your oven to 425˚F. Mix all the ingredients in a bowl. Place everything in the bag, making sure you don’t pierce the aluminium.
Add a few drops of olive oil and close up the final edge, and check the bag is tightly sealed and secure on all sides, and carefully put it onto a roasting pan. Place the pan on a high heat for 1 minute to get the heat going, and then bake in the middle of your preheated oven for 25 minutes.

Remove from the oven, place the bag on a big plate, take it to the table and break open the foil and simply enjoy.
