Roast Potatoes with Bay Leaves & Rosemary

Simple but a very different lovely tasty way of serving roast potatoes.

• 6 medium potatoes
• 8 bay leaves
• few sprigs of rosemary
• olive oil
• salt & pepper

Pre-heat the oven to 200° C. Parboil the unpeeled potatoes in water for 10 minutes, let cool down and then peel.

Using a knife makes some slits across the width of each potato, but don’t cut the whole way through. Insert bay leaves and rosemary in the slits

Place the potatoes in a roasting tin, drizzle with olive oil and season with salt and pepper. Roast in the oven for about 15-20 minutes and golden and cooked through. Discard the bay leaves and rosemary and serve immediately.
