Capellini with Shrimp & Chilli

Delicious and easy pasta, that you’ll be able to make quickly and perfectly every time

Capellini with Shrimp & Chilli (9)  Angel Hair Pasta with Shrimp & Chilli

• 200g Capellini (angel hair pasta)
• 1 red chilli pepper
• 2 large garlic cloves, peeled
• 225g peeled prawns
• 1 large tomato
• 1/2 lemon
• handful fresh basil leaves
• 3 spring onions
• salt & black pepper
• olive oil

  Cook the pasta in boiling salted water, according to the packet instructions ‘al dente’.
In the meantime, thinly slice the chilli and garlic. Heat a pan over a medium high heat and add 2Tbs of olive oil and add the chilli and garlic to the pan and sauté for just a minute and then add the prawns for another minute to fry and season with salt and pepper.

Chop the tomato and spring onions and add them to the pan and cook briefly. Tear the basil leaves and add half to the pan. By now the pasta should be cooked, so drain the pasta and drizzle with extra virgin olive oil and grate over some lemon zest.

Add the cooked pasta to the sauce and mix to coat evenly. Put in your plates, sprinkle with the remaining torn basil and a squeeze of lemon.

*Capellini means "thin hair", Capelli d’angelo literally means angel hair — hence, "angel hair pasta" in English.
