Butternut & Sweet Potato Soup

This quick and easy soup just needs a quarter of an hour bubbling with some stock and spice and its ready to serve

Butternut & Sweet Potato Soup (8)

• 150g Butternut squash, diced
• 150g sweet potatoes, diced
• 750ml Vegetable stock
• 1/4 teaspoon ground cinnamon
• salt & pepper
• 4 Tsp buttermilk

Put the butternut and sweet potatoes in a pan with the hot vegetable stock and the ground cinnamon. Bring to the boil and simmer for 15 minutes, or until the vegetables are tender and season with salt and pepper.

Purée the soup in  a blender- try to remove the central nozzle on the lid and place a towel on top, this way the hot soup wont build-up pressure. I don’t want you getting soup all over your kitchen wall.

Pour the blended soup into your bowls and garnish with a teaspoon of buttermilk.
