Marinated Zucchini (Zucchine Alla Scapece)

This is a typical Neapolitan dish using the ”scapece” method

Zucchine alla Scapece (20)wpserves 4

• 5 small zucchini, thinly slices
• 1 cup flour
• olive oil
• salt
• vinegar

The secret here is to moisten the zucchini slices slightly, so that the flour sticks to them. put them in a bowl and using your fingers, sprinkle some water on top, then get your hands in there and toss the slices until all of them are moistened.

Put the flour in a separate bowl and roll the zucchini slices in it, just a light touch, as we don’t want a heavy batter, so shake off any excess flour. heat the olive oil and fry the slices until golden.

Drain the slices on a plate with kitchen towel, season with salt while they’re still hot and finish with a splash of vinegar and serve immediately .
