Strawberry Flan

The combination of the crust, creamy filling and fruit topping make this a perfect treat. You can always get creative with the berries you put on the top

Strawberry Flan (1) - Cookingthyme

  • 1 cup flour
  • 500g strawberries
  • 1/4 cup sugar
  • 1 Tbs cornstarch
  • Pinch of salt
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1/2 cup crème fraîche
  • 1/2 cup whipping cream

  Preheat oven to 350°. In a food processor, whirl flour, 2 tablespoons of sugar, cornstarch and salt until combined. Then ½ teaspoon of Vanilla and butter and pulse until fine crumbs form and the dough just begins to come together.

Press evenly into bottom and up sides of a greased flan tin with a removable base. Bake until edges are golden, not more than 20 minutes. Let cool down on a rack, then gently push tart crust from pan rim; and set on a plate.

In a bowl with a mixer on high speed, beat crème fraîche, cream, remaining sugar and 1/2 teaspoon of vanilla until thick. Spread over the crust.

Arrange strawberries decoratively on top. You can add any layer of seasonal fruit. Here I’ve used strawberries, but it can be anything that’s fresh and seasonal such as raspberries, blueberries, blackberries or peach slices.

Glaze: Combine sugar, cornflour, corn syrup and water in a saucepan. Bring to boil, stirring, over a medium heat. Boil for 2 minutes. Cool slightly, and then pour over the strawberries.
