Gambas Al Ajillo

This recipe if full of flavour and creaminess of the dish that I fell in love with in Barcelona. Serve with lots of warm crusty bread to mop up that juicy sauce

Gambas al Ajillo (10) Shrimp with Garlic

  • 350 gm shrimp, peeled and deveined
  • 2 -3 garlic cloves, minced
  • olive oil
  • butter
  • fresh lemon juice
  • 1/2 teaspoon paprika
  • 2 tablespoons flat leaf parsley, chopped
  • salt and fresh ground pepper to taste

In a wide, shallow sauté pan over high heat, warm the Olive Oil and the Butter; add the Shrimp and Garlic and sauté quickly for about 2-3 minutes.

Add the lemon juice, paprika, and salt and pepper to taste. Adjust seasonings to your liking.

Transfer to a warmed serving dish, sprinkle with the parsley and serve at once.

Make sure you are "warming" the olive oil and the butter, not cooking it off….. because you’ll want every last bit of it for the sauce
