Tortilla de Patatas

With Italy and Spain in the Euro Cup final I will be posting a few Italian and Spanish recipes I’ve previously made

Here’s how to turn five simple ingredients—potatoes, eggs, onions, olive oil and salt—into a dish that is quick and satisfying, that is called tortilla de patata or also known as tortilla Española or Spanish Potato Omelette

Tortillas de Patatas (15)

  • 3 medium potatoes
  • 1 large onion
  • olive oil
  • four large eggs
  • salt

  I’ve learnt this recipe  from a dear Spanish friend. First peel and chop the onions. Put two tablespoons of olive oil in a frying pan, add the onion, and cook it slowly, stirring occasionally, until it’s soft and slightly browned. Meanwhile, peel the potatoes and thinly slice them, Season them as desired and add them to the frying pan (For obvious reasons, it’s best to use a non-stick pan).

Fry everything together over medium heat, stirring occasionally, until everything turns slightly brown. Remove the pan from the heat and drain the oil. Beat the eggs in a large bowl, and add the potatoes, onions.

Add a little bit of oil in the frying pan and add the mixture. Cook the egg until it sets up on Medium/high heat. Turn the tortilla over so that it browns on both sides; make sure it’s cooked from the inside.

A wedge of tortilla de patatas is often served as a tapa in Spanish cafe’s, the best thing about this dish, it can be eaten hot or at room temperature.
