Spaghetti con Gamberetti e Rucola

The combination of flavours is great and very accessible. Finish off with good-quality olive oil and rocket full of flavour. Very luxurious

Spaghetti with Prawns & Rocket (11)  Spaghetti with Prawns and Rocket

  • 400g spaghetti
  • 400g peeled raw prawns
  • 1 handful of rocket (arugula), roughly torn
  • 2 cloves of garlic, peeled and finely chopped
  • 2 tomatoes
  • 1 red chilli, finely chopped
  • 2 Tbsp. tomato paste
  • 1 lemon, zest and juices
  • salt and black pepper
  • extra virgin olive oil

Cook your spaghetti in a large pan of salted boiling water – aldente– according to the packet instructions.

Meanwhile, heat 3 tablespoons of olive oil in a large frying pan and toss in the garlic and half of the chilli. As the garlic begins to colour, add the prawns and sauté them for a minute. Add the tomato paste and let it simmer for a couple of minutes, then roughly chop the tomatoes and add them as well (squash them with the back of a fork, to get all their lovely juice out). When the pasta is ready, drain it in a colander, reserving a little of the cooking water as we always should do.

Toss the spaghetti with the sauce, squeeze in the lemon juice, add half of the rocket, adding just a little of the reserved cooking water to loosen the sauce a bit. Season with salt and pepper and the remaining chilli.

Divide between your plates and sprinkle with the grated lemon zest and the rest of the rocket leaves. Enjoy!
