Garlic Steamed Broccoli

Broc     Serves 4

  • 1 head of broccoli
  • olive oil
  • garlic clove, thinly sliced
  • salt & pepper

Cut the broccoli into small florets. Trim the stalk bottom and discard. Cut the remaining stalk into thin slices.

Pour enough water into a small  pot to cover the bottom, about 5 cm deep. Add the slices of broccoli stems, oil, garlic and salt. Begin heating over med-high heat.

When water starts to simmer, the garlic will lose much of its pungency and perfume the steam. Add the broccoli florets and cover pot with a tight lid.

Steam until broccoli is tender and bright green, around 5 minutes. The water will finish evaporating just as the broccoli finishes cooking.

Remove the pan from the heat and give it a good shake before tossing the broccoli with the oil and garlic. Serve immediately.
