Herby Chips (Bastoncini Fritti alle Erbe)

I don’t normally cook chips, but I’ve seen people go to restaurants and order chips!

Well it’s difficult to find these herby chips so I’ve started making them at home. To give them more flavour, I coat them in mixed herbs – and they are really yummy!

Herby Chips (1)

  • 10 tbsp. finely mixed chopped herbs, (rosemary, sage, oregano, chives, etc.)
  • 10 tbsp. breadcrumbs, (make your own with good bread)
  • 1.5 kg potatoes, (try to get the largest size you can)
  • 2 egg whites, (slightly beaten)
  • salt
  • Mix the herbs and breadcrumbs on a plate.

    Cut the potatoes into chips; rinse them in cold water and drain. Dip them in the egg whites then coat them in the herb mixture.
    Repeat this with both the egg whites and herb mixture. Leave to rest for a couple of minutes.

    Meanwhile, heat the oil in a saucepan, when hot, fry the chips until golden and drain on a kitchen towel

    Sprinkle with salt and enjoy!
