The Farmer’s Salad

This is a salad I made up while I was on a farm, called it the farmer’s salad, since any farmer spending the whole day working on the farm can make it without the need of cooking, washing the fruits or even washing their hands 🙂
Who would have thought that fruit and olive oil would work so well together, You’ll be surprised at the way all the contrasting flavours come together in this salad. its like the strange combination of ice cream with olive oil, if you haven’t tried it out yet, you gotta give it a go

Insalata del Contadino (2)      Mediterranean Farmer’s Salad

      Serves 4

  • 1 orange
  • 1 lemon
  • 2 small cantaloupes
  • salt
  • lemon juice, freshly squeezed
  • olive oil, extra virgin

Peel and cube your fruit, making sure you remove and discard all the pips and rinds, as they will make your salad taste bitter. Put them together in a big bowl. Add some salt and freshly squeezed lemon juice. Finish it off with your good extra-virgin olive oil.

This salad works well on its own with some bread. But it also makes a great accompaniment to freshly grilled meat or fish.
