Fresh, mild cool and creamy, this tangy cucumber dip flavoured with garlic is the perfect compliment to grilled meats especially lamb and vegetables. It’s served on the side with warm pita bread triangles or crusty bread for dipping

 Tsatsiki (19) Greek Yoghurt & Cucumber Dip

  • 2 cucumbers, peeled & diced
  • 2 garlic cloves
  • 500 ml plain greek yoghurt
  • 2 Tsp dried mint
  • salt

Place the cucumber in a colander and sprinkle generously with salt. Let drain for 45 minutes, then rinse and pat day with a paper towel.

Using a mortar and pestle, or a teaspoon if you don’t have one, crush the garlic with the help of a little salt.

Mix the garlic into the yoghurt, followed by the mint. Finally add the cucumber and serve chilled.

Drizzle with extra-virgin olive oil, and serve with toasted pita bread.
