Superb Spring Pasta

A really simple, quick light tasty pasta dish…. There are many similar recipes to this using basil, The last time I was in Italy I came across this recipe, which seems to be an older version and uses parsley instead of basil, It’s incredibly quick to make, a great one for the springtime, it’s fantastic

My Spring Pasta (2)

Serves 4

  • 400g rotini or (spaghetti/penne)
  • 500g Plum tomatoes
  • 150g Runner beans
  • 1 clove of garlic, peeled and finely chopped
  • bunch of fresh flat-leaf parsley
  • extra virgin olive oil
  • sea salt and freshly ground black pepper
  • 1 teaspoon vinegar
  • Parmesan shavings

In a large bowl scrunch the tomatoes with your hands to slightly mush them and will give you the required light sauce. Mix in the garlic and vinegar. Tear in the parsley and pour some olive oil.

Cook your pasta in salted boiling water according to the packet instructions until al dente. reserving a little of the cooking water. Drain and toss the pasta with the sauce and a little of the reserved cooking water to help loosen it up a bit and quickly toss in with the tomatoes.

Season with some salt and black pepper. Taste and simply add a little more oil or Parmesan, to adjust the taste
Have one last taste and serve with a little extra Parmesan shaved over the top and a sprinkle of parsley leaves.

Call your friends around the table and serve right away.
