Linguine with Lemon, Feta & Basil

Linguine with Lemon, Feta and Basil is an ideal summer pasta due to the really light and zesty flavours. It is also quick and goes well accompanied with green salad and crusty bread to make the meal.

Lemon zest, Basil, Feta, Linguine & Lemon

Serves 4

  • 400g linguine
  • 200g feta cheese, crumbled
  • handful of basil leaves
  • juice and zest of 1 lemon
  • 4 Tbsp olive oil
  • 2 Tbsp toasted pine nuts, optional

Cook the fresh pasta in salted boiling water according to packet instructions until al dente.

When cooked tip drain the pasta into a colander, leaving about 2 tablespoons in the pot.

Return the pasta to the pot and add the lemon juice, zest, basil, olive oil and the crumbled feta. But leave some to garnish, toss well and season to taste.

Divide among your plates and sprinkle over the remaining feta and pine nuts.
