This is a beautiful chicken recipe, that’s gonna blow you away, it’s delicious, tasty and exciting. I’m gonna show you exactly how to prepare it and what the critical points are, and how you can be absolutely brilliant.

  • chicken breasts
  • parmesan
  • thyme
  • chicken strips, turkey or whatever you prefer
  • lemon zest, optional

If you look at a chicken breast, you’ve got a thick end on one side, which is about an inch thick and then you’ve got a thin bit on the other end, which is around a centimetre in thickness. Now a lot of people are worried about cooking chicken. This chicken dish I’m gonna show you will cook about in 7 minutes, and I’ll tell you exactly how to check if its cooked, because you don’t want to overcook your chicken.

Bashing the chicken out thinly before you start cooking means it cooks much faster than a regular chicken breast

What you wanna do is get a clear surface, get your cling film or a meat bag.

Now what we need to do is make both ends the same thickens, so lay your chicken breast on the clingfilm, cover it, and using a pan, rolling pin or anything flat and heavy, just bash the chicken. This way, its gonna flatten and cook quickly, now the chicken should be the same thickness all the way along.

Get one sprig of thyme, you can use rosemary if you like, this will give it a nice flavour, so sprinkle the thyme leaves over the chicken and grate your parmesan as well, and a pinch of salt and pepper.a beautiful equally thin piece of chicken, seasoned with the pepper, thyme, lemon zest and parmesan

If you’ve got some lemons, sprinkle a nice pinch of lemon zest. A small pathetic amount of lemon zest will make all the difference to your chicken.

Get your chicken strips, and lay them over the chicken, you need to cover all the meat overlapping them slightly; this not only will give the dish a great flavour but a nice crispness.

Once you’ve done this, you will have a beautiful equally thin piece of chicken, seasoned with the pepper, herb, lemon zest and parmesan.

Get a large pan on medium heat, drizzle a little olive oil and literally flip your chicken in the pan, chicken strips side down. Don’t walk away, start having a conversation, texting or checking your facebook and not loving the pan and keeping an eye on it, so stay next to it, leave it for around 3-4 minutes, then flip it on the other side.

The chicken strips side should look nice and crispy with a golden brown texture.

Cook for another 3 minutes on the other side, after that if you want to check if its cooked, get your knife and just slice it at an angle.

So you can see if it’s cooked. common sense; raw chicken is pink, cooked chicken is white. simple as that.

Serve with some lemon wedges, and a good drizzle of extra virgin olive oil or balsamic vinegar. It goes well will some boiled veggies, rice or green salad.
