Walnut, Celery and Apple Salad

This is a simple, modern twist I made to the classic Waldorf salad.

Serves 4

  • 4 celery sticksingredients
  • 2 medium apples
  • Squeeze of lemon
  • handful of walnuts, toasted and chopped
  • Dressing:
  • 3 Tbsp of mayonnaise
  • 2 Tbsp of plain yoghurt
  • 1 Tbsp lemon juice
  • salt & black pepper

First, make the dressing, by combining all the ingredients in a bowl and season to taste.

Trim and roughly chop the celery including any leaves, then place in a bowl. Remove the apples core and thinly slice, add to the celery and toss with a little lemon juice to prevent from discolouring. Add half the walnuts and toss well.

Toss all ingredients together put in a serving plate

Put in a serving plate, and scatter the remaining walnuts over the top, drizzle the dressing over the salad or serve in an individual bowl on the side. Enjoy!
